Bonito flakes, or Katsuobushi flakes are dried and fermented fish flakes made from striped tuna. Bonito flakes lend themselves as a perfect base for Dashi (Japanese broth). All you have to do is add this sachet to 500 ml of boiling water and after 1 minute filter the flakes out of the broth. In addition, Bonito flakes are also regularly used on top of hot dishes. Due to the heat, the flakes “wave” a little, which gives the dish a magical touch.
