Chinkiang rice vinegar is a Chinese, caramel-coloured vinegar made from fermented rice. Due to the fermentation process, the flavour is not only sour as you would expect from vinegar, but also salty and savoury. This black rice vinegar is widely used in Chinese cuisine for the preparation of all kinds of dishes, marinades and even as a dipping sauce for e.g. dumplings.
